Caramelized onion, apple and rosemary savory topping open faced sandwich
You will need:
two slices of sourdough bread, toasted
earth balance spread or butter
apricot preserves
caramelized onion (cook 1/2 of a chopped yellow onion in about a Tablespoon of oil in a skillet on medium heat for about 20 minutes stirring constantly until it is caramelized. Peel and core and chop a Granny smith apple and addit in about half way through caramelizing and a ice size sprig of fresh rosemary, chopped. Stir well.
on the toast, slather on some butter or earth balance spread and some apricot preserves, then add the caramelized onion mixture.
