Chili lime beef and quinoa bowl, dairy free, no legumes

For this recipe you will need:

2 pounds tender cut of beef such as skirt steak or ribeye cut into 1 inch cubes

Your favorite recipe of chili like marinade for beef.

A large ziploc bag to marinade the beef cubes in for at heat and hour. Make sure they are covered thoroughly

1 large yellow onion chopped

One avocado sliced

Your favorite recipe of cilantro le salad dressing

Spinach, arugula , cherry tomatoes and diced cucumber for the salad.

Two orange bell prooers seeded and chopped

When the beef is done marinating don’t empty the bag after you take out the beef. Add the onions and make sure they are coated thoroughly and let them sit while the meat is being cooked in some oil on a skillet until done. Check for doneness. Four minutes on each side on medium high heat in about a tablespoon of olive oil. Empty the cooked beef onto a plate and add the onions and bell pepper to the skillet and cook until tender.

Add in half of the bell pepper and onion mixture to the beef and stir it and add the other half to the quinoa and stir. The marinade flavors the quinoa extremely nicely.

Add a serving of quinoa and next to that add a serving of the beef mixture. Next to that add the avocado and next to that add the spinach sakad with cilantro lime dressing.
