Fajita seasoning egg bites with ground chuck
You will need:
8 eggs
1 teaspoon your choice of hot sauce (I chose Frank’s)
1 tablespoon your choice of fajita seasoning (I chose McCormick fajita seasoning)
A blender
Whisk the eggs in a medium bowl and then add the hot sauce and fajita seasoning) whizz it up in the blender. Leave it in there to your it into the muffin pan or silicone mold (I chose a silicone mold)
One small onion chopped
One orange bell pepper seeded and diced
One pound ground chuck broken up with a wooden spoon and cooked until done
1/2 cup your favorite enchilada sauce ;I chose El Paso)
When the meat is done cooking, empty that into a bowl and clean out the grease from the pan. Add the onions and cook until they are done (about five minutes on medium heat) then add the bell pepper and the meat . And then add the enchilada sauce and cook a bit more.
Prepare the muffin pan with cooking spray and fill up the cavities with the eggs from the binder using the blender to pour it.
With a spoon add portions of the meat mixture to each cavity . Make sure it has plenty.
Bake for 25 minutes. Let cool for about ten minutes before serving.
