Thanksgiving style yam patties. Dairy free and gluten free
You will need:
One cup cooked mashed yam cooked in water
1/6 cup almond flour
1 egg, beaten
Your favorite turkey gravy recipe prepared (I make mine with water and potato starch so that it is dairy free and gluten free.
Cooked turkey meat of choice, diced (I chose dark meat)
Chopped pecans to taste for the top 1 tablespoon olive oil for frying the patties
Mix up the mashed yam, egg and almond flour in a bowl. Prep a skillet with one tablespoon olive oil. Dollop the mixture to form patties in the skillet and cook until done on either side on medium high heat. A few minutes each side and check for doneness.
Transfer the patties to a plate and add the cranberry sauce to taste and the turkey and pour gravy on top of that to taste and add chopped pecans to taste.
