Grapefruit, Pineapple, rosemary and thyme spinach salad (Goat cheese optional)

You will need a zester for this and a small bowl for mixing the grapefruit and the pineapple and orange zest in.

1 teaspoon fresh grated orange zest

one package fruit refreshers red grapefruit by del monte drained

one small can of pineapple tidbits drained

in a small bowl, mix the orange zest in with the pineapple and grapefruit and set aside.

rinse about four cups of baby spinach or your choice of salad greens.

you will need a nice size sprig of fresh rosemary and fresh thyme leaves. eyeball it.

stir everything in a medium size bowl and if you’re using goat cheese add about two tablespoons of goat cheese broken up.

Add a decent amount of sliced almonds and use youfr favorite honey vinaigrette
