Barbecue turkey loaf with potatoes and carrots, gluten free and dairy free

You will need:

A baking pan lined with parchment paper.

2 pounds ground turkey

2 eggs

½ cup your choice of barbecue sauce

½ cup quick oats

1 large carrot, grated

2 tablespoons olive oil

2 tablespoons olive oil mixed in with the loaf ingredients

Mix these ingredients well in a large bowl.

2 medium ykon gold potatoes finely diced

½ chopped yellow onion

Mix these ingredients well with the loaf ingredient mixture.

In a small bowl mix together ½ cup of ketchup abd ½ cup barbecue sauce. This is the glaze. You wait to add this at a point during the cooking)

(Saute the onion and potatoes on a skillet in a tablespoon of olive oil until the potatoes are just about done but not quite (they will finish baking in the oven when they are mixed in with the ground d turkey mixture)

Preheat the oven to 350 degrees Fahrenheit.

Form the loaf mixture into a loaf on the prepared baking pan and bake for 40 minutes. Take the loaf out of the oven and apply the glaze all over the loaf with a culinary brush. Put the loaf back in the oven for 20 minutes. Check with a meat thermometer for doneness. It should be at 170 degrees F. It's different wort beef for the temperature for doneness, as I mentioned before.
