Barley with peas and carrots and capers
You will need a rice cooker and a skillet to cook the onions in and transfer the barley to.
One package of frozen peas and carrots cooked in the microwave.
One cup of pearl barley in the rice cooker
One cup of white wine
One cup of chicken broth
Cook in the rice cooker for barley settings.
When that is cooking, sauté the onion in a bit of olive oil 1 tablespoon) and when that is caramelized add the cooked barley and peas and carrots.
Add 1 tablespoon of capers
Mix thoroughly
Serve the rosemary and dill coconut yogurt chicken (the recipe before this one) on top of a nice serving of this lovely barley dish.
