Cilantro lime chicken
You will need to preheat the oven to 425 degrees F.
One sheet pan lined with tinfoil
6 boneless skinless chicken breasts
Chili lime rub
Mix in a small bowl 1 tablespoon of chili powder
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1/2 tablespoon cumin
1/2 teaspoon kosher salt
Zest on one lime to be added close up the time you add this on the chicken so, set this aside.
Slice three lines thinly and have a decent amount of fresh cilantro ready to line the sheet pan.
First layer after the tinfoil is nine slices of lime spread on the sheet pan and top that with a decent amount of fresh cilantro sprigs. Run the chicken breasts in olive oil before adding the spice mixture in this recipe. Add in the lime zest thoroughly to the mixture and then add the rub on both sides of each chicken breast. Then on top of the chicken breasts arrange the lime slices throughout and top with more cilantro sprigs.
Bake for 20 minutes and check for doneness.
