Sundried tomato, artichoke heart and quinoa stuffed tomato

You will need a baking tray lined with tinfoil.

preheat the oven to 400 degrees F.

This is one of those recipes that depends on the size of your tomato. Just eyeball it accordingly.

You will need shredded fresh parmesan cheese

Cooked quinoa

Chopped pistachios

1/2 of a sauteed onion

a few Italian herb seasoned artichoke hearts drained and chopped reserve some liquid for drizzle

Hollow out a tomato. Add the quinoa with enough room at the top to add the other ingredients. Add the artichoke hearts and stir, add the cheese on top of that and add the drizzle of the liquid from the artichoke hearts. Add the chopped pistachios to coat the top. Bake for ten minutes and check for doneness. Again, this will depend on the size of your tomato.
