Smoked Gouda, Gruyere, tomato toasted cheese sandwich

You will need a baking tray, line it with tinfoil. You will need two slices of sourdough bread. Spread one side of each slice with butter and set it down on the tinfoil butter side down. You will cook these open face style in the oven and close them in on each other when it is done using a spatula if needed to do so. Bread sizes will vary so this is an eyeball it type of a recipe. Roast some fresh garlic to spread on the bread before you start adding the ingredients. Caramelize one half of a chopped yellow onion.(about 20 minutes for that) Spread the garlic to taste. Add preferred amount of gouda on one side and add preferred amount of gruyere on the other side. Add the caramelized onion on the gouda. Add some fresh rosemary to taste as well on the gruyere side and a few slices of tomato.

Bake at 400 degrees F for 10 minutes.
