Baba Ganoush with roasted garbanzos and cheese
You will need a batch of your favorite Baba Ganoush recipe
1 16 ounce can garbanzos drained (preheat the oven to 400 degrees F and you will also need a baking sheet covered in tinfoil) put the garbanzos in a bowl and add 2 tablespoon olive oil, 1 Tablespoon onion powder and one Tablespoon paprika. Stir in well and bake for 25 to 35 minutes.
1/4 cup crumbled feta cheese stir this in the Baba Ganoush. The rest of it you eyeball the shredded mozzarella cheese until the top is covered with it and sprinkle the garbanzos over that evenly on the top. Broil in the oven until the cheese is melted (about five minutes) enjoy with some pita bread dipped in.
