Preheat the oven to 400 degrees
You will need:
8 eggs well beaten
¼ cup nutritional yeast flakes
2 tablespoons your choice of fajita seasoning
¼ cup of unflavored almond milk
½ cup your choice of medium spiced salsa (I chose pace)
2 15 ounce cans of pinto beans rinsed and drained
In a large bowl beat the eggs well. Add in the nutritional yeast flakes, fajita seasoning. Then add the almond milk and the salsa followed by the pinto beans. Prep a 9” by 13” baking pan with cooking spray and pour in the mixture. Bake for 25 minutes and let cool about 15 minutes before serving.
