Sweet potato cranberry Gruyere cheese egg bite

Preheat the oven to 350 degrees F.

You will need:

A blender

2 silicone muffin molds

Cooking spray

A baking tray

10 eggs

¾ cup cottage cheese

¼ teaspoon ground cinnamon

2 tablespoons of ocean spray cranberry sauce jelly kind

(Whizz it up in the blender and set aside)

¾ cup shredded Gruyere cheese set aside to sprinkle on once the egg mixture is poured over the sweet potato and onion)

2 medium sweet potatoes diced small and cooked your preferred way of cooking them (I choose the air fryer).

One yellow onion chopped and sautéed

Place the silicone muffin molds on to the baking tray

Place a decent amount of sweet potato and sautéed onion mixture in each cup to cover the bottom for sure. Pour the egg mixture. About 2/3 of the way full. Sprinkle some Gruyere cheese on each of the muffin tin cavities (there will be a bit of the mixture left to make some extra if you wish which is what I like to do with these.)

Bake for 25 -30 minutes and take out of the oven. Let cool about 20 minutes at least before removing from the muffin mold.
